Here’s what you’ll need to make this recipe for 4-6 servings:
Ingredients:
- 2 tablespoons olive oil or bacon grease
- 1 chopped onion
- 3 chopped carrots
- 2 minced garlic cloves
- 1 lb lean ground beef
- 2 tablespoons maple syrup
- 2 teaspoons paprika
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 (14 ounce) can diced tomatoes
- 1 cup beef broth
- 8 ounces elbow macaroni
- 4 slices bacon, chopped
- 1 cup shredded Canadian cheddar cheese
Directions:
Heat the olive oil in a saucepan over medium-high heat. Add the onion, carrots, and beef; cook, breaking up the meat with a wooden spoon, until the beef is no longer pink, about 5 minutes.
Add the garlic, maple syrup, paprika, thyme, salt, and pepper; cook, stirring, for 1 minute.
Stir in the tomatoes, broth, and bacon. Bring to a boil, then reduce heat and simmer, covered, until the carrots are tender, about 10 minutes.
Meanwhile, bring a pot of salted water to a boil. Cook the macaroni according to package directions until al dente; drain, reserving some of the cooking water.
Add the cooked macaroni to the saucepan with the beef mixture. Toss to combine, adding a splash of the reserved cooking water as needed to create a sauce-like consistency.
Remove from heat and stir in the cheddar cheese until melted and smooth. Let stand for 5 minutes, then serve and enjoy your cozy Canadian Goulash!
