Sao Miguel Family Farm’s Homemade Irish Soda Bread

Hey there, Northern Ontario! Can you feel it? The Victoria Day long weekend is just around the corner, and it’s bringing us warmer weather, laughter, and the perfect mix of relaxation, delicious food, and quality time with loved ones!

Irish Soda Bread: A Timeless Recipe
Originating from Ireland, Soda Bread is a rustic and delicious bread that requires minimal ingredients and effort. Its simplicity makes it a popular choice for baking enthusiasts and beginners alike.

Ingredients:
4 cups All Purpose Flour
¼ cup Granulated Sugar
1 tbsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 tbsp Caraway Seed
1 cup currant/raisin
1/3 cup cold Shortening
1 whole Egg
1 ¾ cup Buttermilk

Method:
Preheat oven to 350F and grease a rimmed baking sheet

  1. In large bowl, sift together flour, sugar, baking powder, baking soda and salt.
    Add caraway seeds and stir well.
  2. Using a pastry blender or 2 knives, cut in shortening, until mixture looks like
    coarse crumbs.
  3. Stir in currants.
  4. In a large cup, whisk egg add buttermilk to egg. Stir to incorporate then add to
    flour mixture.
  5. Mix to form a soft dough that clings together.
  6. Turn onto a floured surface and knead gently forming a 7inch ball. DO NOT
    OVER KNEAD.
  7. Place dough into the prepared baking sheet. Mark an “X” about 4 inches long
    and a ¼ inch deep.
  8. Bake for 55 -60 minutes until tooth pick inserted in center comes out clean.
  9. Remove immediately from baking sheet; and cool on wire rack. Bread is best eaten the day it is made.

New Baby Chicks Arrive at the Farm!

Spring is here!! And so are our new chickadees! Chickens are an integral part of any farm, and every year, there’s always something special about the arrival of a new batch of baby chicks. These little fluffy creatures signify new life and new beginnings, and it’s always exciting to watch them grow into full-grown chickens.

At our farm, we order our chicks from a hatchery. These hatcheries carefully breed and raise baby chicks, and then ship them out to farms and other locations around the country. When the chicks arrive at our farm, they’re usually only a few days old and are tiny, fluffy balls of down.

Once the chicks arrive, we get them settled into their new home. We have a special brooder area set up for them, which is essentially a warm, cozy space where they can live until they’re old enough to move outside. We provide the chicks with everything they need, including fresh water, food, and heat lamps to keep them warm.

As the chicks grow, they go through various stages of development. At first, they’re very fragile and require a lot of attention and care. As they get older, they become more independent and start exploring their surroundings. It’s fun to watch them peck around and flap their little wings.

One thing that’s always surprising to people who haven’t raised chicks before is just how quickly they grow. Within a matter of weeks, those tiny balls of fluff turn into real chickens. They start growing feathers and lose their baby down. It’s amazing to watch this transformation take place.

At our farm, we raise our chicks with the intention of selling them as summer chickens. We give them plenty of space to roam and grow, and make sure they have a healthy diet and plenty of fresh air and sunshine. By the time summer rolls around, they’re ready for their new homes.

The arrival of baby chicks at the farm is always an exciting time. It’s a reminder of the circle of life and the importance of nurturing new life on the farm. We look forward to watching these little chicks grow into healthy and happy chickens, and we can’t wait to share them with our community.

With their chewy and spongey texture, crispy exterior and juicy interior, crumpets are the ultimate breakfast comfort food. We love them piping hot with butter, cheese, or even a dollop of strawberry jam. But trust us, there’s nothing quite like the taste of homemade crumpets with farm fresh eggs!

And did you know that crumpets evolved in the 19th century from the Scottish crumpet, which looks like a pancake and is made with baking powder? But don’t worry, you don’t need to travel across the pond to enjoy these scrumptious treats!

MAKES: 10 Crumpets
PREP TIME: 20 minutes, plus 1 hr to rest
COOKING TIME: 6 minutes

INGREDIENTS

  • 1 ¾ cups white bread flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup lukewarm milk
  • 2/3 cup lukewarm water
  • 1 tsp active dry yeast
  • Oil, for oiling and frying
  • And don’t forget the farm fresh eggs!

DIRECTIONS

Gather your ingredients, grab your bunny apron, and let’s get cooking!

  1. First, sift together the flour, baking powder, and salt into a large bowl. Gradually add the milk and water, then add the yeast halfway through. Beat everything vigorously until the mixture is the consistency of heavy cream.
  2. Cover the bowl with plastic wrap and let the mixture rest for one hour at room temperature, until it has expanded and bubbles have formed in it.
  3. Next, oil some individual 3 ¼ inch pastry or crumpet rings and heat some oil in a heavy bottom skillet. Place the rings in the skillet and pour 2-3 tablespoons of the batter into each ring. Gently cook until the tops are dry or have developed small holes.
  4. Remove the rings and flip over the crumpets, rubbing the flipped crumpets bottoms in the pan to get them coated. Remove the crumpets from the pan once they’re nicely browned and transfer them to a warm plate. Repeat until all the mixture has been used, oiling the rings and skillet when necessary.

Introducing our Canadian Goulash! This dish is perfect for a cozy night in, as it’s hearty, satisfying, and easy to make. With a mix of root vegetables, ground beef, and paprika, this version adds in some Canadian flavor with maple syrup, bacon, and Canadian cheddar cheese. Ready in 30 minutes! And the best part? It’s freezer-friendly, so you can make a big batch and enjoy it for weeks.

Here’s what you’ll need to make this recipe for 4-6 servings:

Ingredients:

  • 2 tablespoons olive oil or bacon grease
  • 1 chopped onion
  • 3 chopped carrots
  • 2 minced garlic cloves
  • 1 lb lean ground beef
  • 2 tablespoons maple syrup
  • 2 teaspoons paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
