And did you know that crumpets evolved in the 19th century from the Scottish crumpet, which looks like a pancake and is made with baking powder? But don’t worry, you don’t need to travel across the pond to enjoy these scrumptious treats!

INGREDIENTS
- 1 ¾ cups white bread flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup lukewarm milk
- 2/3 cup lukewarm water
- 1 tsp active dry yeast
- Oil, for oiling and frying
- And don’t forget the farm fresh eggs!
DIRECTIONS
Gather your ingredients, grab your bunny apron, and let’s get cooking!
- First, sift together the flour, baking powder, and salt into a large bowl. Gradually add the milk and water, then add the yeast halfway through. Beat everything vigorously until the mixture is the consistency of heavy cream.
- Cover the bowl with plastic wrap and let the mixture rest for one hour at room temperature, until it has expanded and bubbles have formed in it.
- Next, oil some individual 3 ¼ inch pastry or crumpet rings and heat some oil in a heavy bottom skillet. Place the rings in the skillet and pour 2-3 tablespoons of the batter into each ring. Gently cook until the tops are dry or have developed small holes.
- Remove the rings and flip over the crumpets, rubbing the flipped crumpets bottoms in the pan to get them coated. Remove the crumpets from the pan once they’re nicely browned and transfer them to a warm plate. Repeat until all the mixture has been used, oiling the rings and skillet when necessary.
