Irish Soda Bread: A Timeless Recipe
Originating from Ireland, Soda Bread is a rustic and delicious bread that requires minimal ingredients and effort. Its simplicity makes it a popular choice for baking enthusiasts and beginners alike.
Ingredients:
4 cups All Purpose Flour
¼ cup Granulated Sugar
1 tbsp Baking Powder
1 tsp Baking Soda
1 tsp Salt
2 tbsp Caraway Seed
1 cup currant/raisin
1/3 cup cold Shortening
1 whole Egg
1 ¾ cup Buttermilk
Method:
Preheat oven to 350F and grease a rimmed baking sheet
- In large bowl, sift together flour, sugar, baking powder, baking soda and salt.
Add caraway seeds and stir well. - Using a pastry blender or 2 knives, cut in shortening, until mixture looks like
coarse crumbs. - Stir in currants.
- In a large cup, whisk egg add buttermilk to egg. Stir to incorporate then add to
flour mixture. - Mix to form a soft dough that clings together.
- Turn onto a floured surface and knead gently forming a 7inch ball. DO NOT
OVER KNEAD. - Place dough into the prepared baking sheet. Mark an “X” about 4 inches long
and a ¼ inch deep. - Bake for 55 -60 minutes until tooth pick inserted in center comes out clean.
- Remove immediately from baking sheet; and cool on wire rack. Bread is best eaten the day it is made.
